El Cambalache is a farm run by Samuel Zavala that has been in his family for 12 years. We have been working with Samuel for six years and are happy to take part of his development of the farm. Samuel is a young agronomist, and he use both his familiys tradition and his own education on the farm. Samuel is in love with Maracaturra, a variety with big beans and when treated iright a unique fruity and spicy flavour. This lot is a honey process and Samuel take care of most of the process on the farm, and do the final drying on raised tables in dryer climate on lower altitude. El Cambalache placed #10 in Cup of Excellence with this exact lot. We are lucky we got to book this part of the lot before the competition.
